These feel kind of fancy, but are so simple to make, and so amazingly GOOD! Cherry tomatoes with olive oil, garlic, and fresh thyme, served over grilled bread and
topped with creamy burrata cheese, sweet peaches, and basil make a delicious snack.
Ingredients
Tomato Vinaigrette:
- 1/3 cup Roasted Garlic Olive Oil
- 2 cups cherry tomatoes
- 3 cloves garlic chopped
- 2 tbsp fresh thyme
- red pepper flakes to taste
- sea salt & black pepper to taste
- 2 tbsp Peach White Balsamic Reduction
Crostini:
- 1 french baguette sliced
- Roasted Garlic Olive Oil to drizzle
- 8 oz burrata cheese room temperature
- 2 peaches thinly sliced
- fresh basil to top with

Instructions
To make the vinaigrette:
- Heat a large skillet over medium heat. Add the olive oil, vinegar, tomatoes, garlic, thyme, and a pinch each of red pepper flakes, salt, and pepper.
- Cook until the tomatoes just begin to burst about 15 minutes. Remove from the heat and let cool slightly.
- Crostinis:
- Preheat your oven to 400° F.
- Place the bread on a baking sheet and drizzle roasted garlic olive oil on both sides of each slice, season with salt. Place the bread into the oven for 5-7 minutes or until crisp and slightly brown.
Assembly:
- Break the burrata and spread desired amount over each slice of bread. Top with a layer of thinly sliced peaches, then spoon over the tomato vinaigrette. Top with fresh basil and enjoy!
