Cook until the tomatoes just begin to burst about 15 minutes. Remove from the heat and let cool slightly.
Crostinis:
Preheat your oven to 400° F.
Place the bread on a baking sheet and drizzle roasted garlic olive oil on both sides of each slice, season with salt. Place the bread into the oven for 5-7 minutes or until crisp and slightly brown.
Assembly:
Break the burrata and spread desired amount over each slice of bread. Top with a layer of thinly sliced peaches, then spoon over the tomato vinaigrette. Top with fresh basil and enjoy!
