A simple yet delicious way to roast carrots.
Ingredients
- 3 bunches of medium carrots with tops cut to 2 inches
- 2 cloves of garlic chopped and crushed
- 3 tbsp Balanced Extra Virgin Olive Oil
- 1/2 tsp sea salt

Instructions
- Preheat oven to 400 degrees F. Wash carrots and lay on a parchment paper covered sheet pan.
- Drizzle EVOO evenly over carrots, then evenly sprinkle garlic on top.
- Salt carrots and place in the oven for 30 minutes. After 30 minutes, flip carrots to opposite side and roast for another 20 minutes. Take out of oven – enjoy warm or cold, your choice!
