Joey’s infamous salad recipe! The festive flavors are perfect for the holiday season but this sweet, tangy and light salad make it perfect to enjoy on a hot summer day!
Equipment
- food processor optional
Ingredients
For the dressing:
- 1/4 cup Arizona Valencia Orange Olive Oil
- 1/4 cup Balanced Extra Virgin Olive Oil
- 1/8 cup Cranberry White Balsamic Reduction
- 1/2 shallot finely chopped
- 1 tbsp maple syrup
- sea salt to taste
- black pepper to taste
For the salad:
- 4-6 cups packed arugula rinsed
- 1/4 cup Grana Padano or parmesan cheese
- 1/4 cup pomegranate seeds
- 1/4 cup pepitas
- sea salt to taste
- black pepper to taste
Instructions
- Add all salad ingredients to a large bowl.
- Blend dressing ingredients in a food processor or a blender
- Drizzle dressing to top salad, toss the salad. Enjoy
