Heirloom Tomato, Red Onion & Goat Cheese Salad

When tomato season is in full swing, this is a fantastic addition to any meal (if at all possible, use heirloom tomatoes). You will want to serve with crusty Italian bread to wipe up the drippings!

Ingredients

• 2 large vine ripened tomatoes diced
• 1/4 red onion sliced
• 2 oz goat cheese crumbled
• 5 tbsp Meyer Lemon Olive Oil
• 1 tbsp Fig Balsamic Reduction
• 3-4 fresh basil leaves
• sea salt to taste
• fresh cracked black pepper to taste

Instructions

• First, dice your tomatoes and slice your red onion.
• Layer tomatoes on a shallow serving plate.
• Top with onions and goat cheese.
• In a small bowl, whisk together Meyer Lemon Olive Oil and Fig Balsamic Reduction.
• Pour mixture over tomatoes, top with basil, and season with salt and pepper.
