When tomato season is in full swing, this is a fantastic addition to any meal (if at all possible, use heirloom tomatoes). You will want to serve with crusty Italian bread to wipe up the drippings!
Ingredients
- 2 large vine ripened tomatoes diced
- 1/4 red onion sliced
- 2 oz goat cheese crumbled
- 5 tbsp Meyer Lemon Olive Oil
- 1 tbsp Fig Balsamic Reduction
- 3-4 fresh basil leaves
- sea salt to taste
- fresh cracked black pepper to taste
Instructions
- First, dice your tomatoes and slice your red onion.
- Layer tomatoes on a shallow serving plate.
- Top with onions and goat cheese.
- In a small bowl, whisk together Meyer Lemon Olive Oil and Fig Balsamic Reduction.
- Pour mixture over tomatoes, top with basil, and season with salt and pepper.
