Feeling guilty? This faux bruschetta is a perfect low carb alternative.
Ingredients
- 1 mandarin orange segmented
- 3 green or red endives
- 1/2 cup pistachios crushed
- 1/2 cup goat cheese
- fresh ground cracked pepper
For the dressing:
- 5 tbsp White Balsamic Vinegar
- 1/2 cup Delicate Extra Virgin Olive Oil
- 1 tbsp dijon mustard
- 1 garlic clove crushed
Instructions
- Combine all dressing ingredients in bowl and whisk together until emulsified.
- Assemble by separating each endive leaf and spooning an equal amount of goat cheese onto each leaf.
- Add a mandarin slice and then top with crushed pistachios.
- Drizzle with dressing and fresh ground cracked pepper.
