Ingredients

  • 1 mandarin orange segmented
  • 3 green or red endives
  • 1/2 cup pistachios crushed
  • 1/2 cup goat cheese
  • fresh ground cracked pepper

For the dressing:

  • 5 tbsp White Balsamic Vinegar
  • 1/2 cup Delicate Extra Virgin Olive Oil
  • 1 tbsp dijon mustard
  • 1 garlic clove crushed

Instructions

  • Combine all dressing ingredients in bowl and whisk together until emulsified.
  • Assemble by separating each endive leaf and spooning an equal amount of goat cheese onto each leaf.
  • Add a mandarin slice and then top with crushed pistachios.
  • Drizzle with dressing and fresh ground cracked pepper.
