Cherry-Lime Arugula Salad

Ingredients

  • 4 cups  arugula
  • 1/2 cup dried cherries or cranberries 
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup salted pecans or walnuts

For the dressing

Instructions

  • Toss arugula, dried cherries, goat cheese, and nuts in a large bowl.
  • In a small bowl, whisk together cherry balsamic, lime olive oil, Dijon mustard, salt, and pepper to make the dressing.
  •  Drizzle dressing over the salad and toss gently. Serve immediately.

Notes

**Tip**: Add grilled chicken or shrimp for a heartier meal.
