Season pork with salt and pepper. In a skillet, heat one tablespoon of lime olive oil over medium-high heat and sear the pork on all sides (about 6-8 minutes).
In a bowl, mix cherry balsamic, garlic, rosemary, and remaining lime olive oil.
Brush pork with half the glaze, transfer to a baking dish, and roast for 15-20 minutes (internal temp 145°F/63°C).
Let rest 5 minutes, slice, and drizzle with remaining glaze.
