
Ingredients
- 1 lb pork tenderloin
- 1/4 cup Dark Cherry Balsamic Reduction
- 2 tbsp Mexican Lime Olive Oil
- 2 cloves minced garlic
- 1 tsp fresh rosemary, chopped
- Salt 4 pepper to taste
Instructions
- Preheat oven to 375°F (190°C)
- Season pork with salt and pepper. In a skillet, heat one tablespoon of lime olive oil over medium-high heat and sear the pork on all sides (about 6-8 minutes).
- In a bowl, mix cherry balsamic, garlic, rosemary, and remaining lime olive oil.
- Brush pork with half the glaze, transfer to a baking dish, and roast for 15-20 minutes (internal temp 145°F/63°C).
- Let rest 5 minutes, slice, and drizzle with remaining glaze.

**Tip**: Pair with roasted vegetables or quinoa.

yum yum yum. The depth of the cherry balsamic reduction pairs so well with the pork and rosemary, garlic seasoning; I paired mine with some buttery mashed potatoes and candied carrots. Ended up putting some of the glaze on the carrots; The balsamic reduction is really the star of the show. Sooo delicious!
