This sweet potato fries recipe uses only 5 ingredients making it easy to whip up as an afternoon snack or a dinner side!
Ingredients
- 1 large sweet potato about 1 lb
- 1 tbsp cornstarch optional for extra crisp
- 1/2 tsp kosher salt or more as desired
- 3 tbsp Robust Extra Virgin Olive Oil
- 3 sprigs of fresh rosemary

Instructions
- Preheat the oven to 400°F. Peel and cut the sweet potato into 1/4-inch-thick sticks or wedges.
- Place the sweet potato wedges in a large bowl and add the cornstarch and salt. Toss together. Add the olive oil and continue to toss until the potato wedges are evenly coated.
- Transfer potato wedges onto an ungreased baking sheet. Sprinkle rosemary evenly on top of wedges. Roast in oven for 15 minutes. After 15 minutes, use a spatula or tongs to flip the individual wedges and throw them back in the oven for another 5 to 10 minutes. Fries should be crispy on the outside and tender on the inside.
