Place cheese and basil leaves between the 2 slices of bread. Brush a liberal amount of olive oil on one side of the sandwich and lightly salt. Place oil side down into a nonstick skillet over medium -low heat.
Brush the other side of the sandwich with olive oil and lightly salt.
Cook until golden on the bottom 3-4 minutes. Flip and cook until the other side is golden and the cheese melts, 3 to 5 more minutes.
