Ingredients
Steak marinade:
- 2 steaks of your choice
- 1 tbsp raw cocoa powder
- 2 tsp dried rosemary
- 1 tbsp sea salt
- 1 tsp brown sugar
- 1 tsp black pepper
- 1 tsp chili powder
- pinch of cayenne powder
- Dark Chocolate Olive Oil to coat with
Salad:
- 5 oz package spring mix salad greens
- 1 cup walnuts chopped
- 8 oz fresh mozzarella pearls
- 1.5 cups fresh strawberries sliced
Vinaigrette:
- 1/4 cup Strawberry Balsamic Reduction
- 1/4 cup Dark Chocolate Olive Oil
- 1/4 cup dark chocolate chips
- 1.5 tsp Olive Blossom Honey
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- If possible, season the steaks a few hours in advance with a sprinkle of salt. Combine cocoa powder, rosemary, salt, pepper, brown sugar, chili powder, and cayenne pepper to make the rub.
- When ready to cook, pull the steaks out of the fridge and let rest for 30 min, drizzle with Dark Chocolate Olive Oil and rub generously with the cocoa rub until well coated.
- Heat a cast iron pan or griddle at medium-high heat. Once pre-heated and cast-iron is hot, near smoking, add a tbsp of Dark Chocolate Olive Oil to coat. Lay each steak on the cast iron and sear steak to your liking.
- Now, to make the salad dressing, first melt the chocolate chips over the stove or in the microwave. Stir until smooth. Whisk in the Strawberry Balsamic Reduction, Dark Chocolate Olive Oil, honey, salt and pepper.
- Add the strawberries, walnuts, and mozzarella to salad greens.
- Drizzle the dressing over the salad and toss.
- Serve the steak and salad together and enjoy!
