SWEET POTATO FRIES RECIPE
I love, love, love sweet potato fries, I mean, who doesn't? There's something just a bit more exciting, appealing and well, sweet about them. I love them even more when they are oven-baked (as opposed to deep-fried) with just the right amount of crisp and of course, made with olive oil. Yes, when I make fries, I always reach for the olive oil.
This sweet potato fries recipe uses only 5 ingredients making it easy to whip up as an afternoon snack or a dinner side! It's my favorite way to eat this starchy, sweet-tasting root vegetable.
Baked Sweet Potato Fries
What You'll Need:
- 1 large sweet potato (about 1 pound)
- 1 tablespoon cornstarch (optional for extra crisp)
- 1/2 teaspoon kosher salt
- 3 tablespoons Extra Virgin Olive Oil
- 3 sprigs rosemary
The Method:
Preheat the oven to 400°F. Peel and cut the sweet potato into 1/4-inch-thick sticks or wedges.
Place the sweet potato in a large bowl and add the cornstarch and salt. Toss together. Add the olive oil and continue to toss until the potato wedges are evenly coated.
Transfer potato wedges onto an ungreased baking sheet. Sprinkle rosemary evenly on top of wedges.
Roast in oven for 15 minutes. After 15 minutes, use a spatula or tongs to flip the individual wedges and throw them back in the oven for another 5 to 10 minutes. Fries should be crispy on the outside and tender on the inside.
Add additional salt to taste before serving and...enjoy!
