It's Springtime which means Peeps are all around us. We were brainstorming different ways we could somehow incorporate these little baby mallows of colorful goodness into some sort of treat while also using our extra virgin olive oil (EVOO). PEEPS STUFFED OLIVE OIL CHOCOLATE CHIP COOKIES!

What better way to celebrate Easter than with a fun and easy dessert? Get ready for the ooey gooey goodness... 

Peeps Stuffed Olive Oil Chocolate Chip Cookies

Yield: 8-12 cookies (depending on this size you want)

WHAT YOU'LL NEED:

• 2 1/4 cups unbleached all-purpose flour
• 1 tsp. baking soda
• 1 tsp. salt
• 3/4 cup Chocolate Olive Oil
• 3/4 cup granulated sugar
• 3/4 cup packed brown sugar
• 1 tsp. vanilla
• 2 whole eggs
• 2 cups semi sweet chocolate chips
• 12 whole Peeps bunnies (not chicks, bunnies are easier to stuff with)

THE METHOD:

Preheat the oven to 375 degrees F. 

Combine the flour, baking soda, and salt in a medium bowl and set aside.

Combine sugars, vanilla, and Chocolate Olive Oil. Beat in the eggs one a time. Gradually beat in the flour mixture one cup at a time.

Taking a golf ball sized amount of dough, wrap it around one of the Peeps bunnies completely. Make sure that none of the Peep is showing before placing it on the cookie sheet.

Place cookies on a sheet leaving room between cookies because they will spread. Bake at 375 degrees for 16-18 minutes or until lightly browned. These over-bake easily, so it’s better to take them out a bit early if you’re unsure. Allow to cool for a bit on the baking sheet, then move to cooling rack to finish cooling.
