Grilled Corn 5 Ways

The one good thing about an Arizona Summer is the seasonal produce that comes with it! Yes, things still grow in our incredible heat - sweet corn being one of them.  We love our local, non-GMO sweet corn and think it pairs deliciously well with our olive oils.

With Summer right around the corner, we thought it would be fun to share our ways to grill sweet corn with you all! There is nothing like a tasty corn on the cob to get the Summer grillin' party started!

The method is essentially the same for each way. Bring a large pot of salted water to a boil.  Add the shucked corn and boil for seven minutes; remove. Grill corn until lightly charred then baste with any of the following to create a simple and tasty addition to your summer BBQ...

Classic sweet corn

Simple, but so much more than basic. Taste buds...think...popcorn on steroids!

Baste with EVOO and with sprinkle with sea salt.

Chili-Lime sweet corn

This variation will give you a deliciously tangy kick, the combo is just right.

Italian Street Corn

This is the like Italian version of Mexican Street Corn. Yep, we have your attention now. Try this creamy and surprisingly light variation that will fix any craving!

  • 1 tablespoon chopped Italian parsley
  • 4 tablespoons grated Parmesan cheese
  • 1/2 cup Garlic Parmesan Crema

Whisk all ingredients together. Finish with a sprinkle of fresh parsley and grated Parmesan.

Dust Devil Street Corn

Looking to spice things up? This Dust Devil Street Corn will knock your socks off!

  • 1/4 cup Chile Olive Oil
  • 1/4 cup Mexican Lime Olive Oil
  • 1/4 cup Dust Devil Crema
  • 1/2 cup (110g) finely crumbled feta cheese, plus more for serving
  • 1/2 teaspoon ancho or guajillo chili powder, plus more for serving
  • 1 medium clove garlic, finely minced (about 1 teaspoon
  • 1/4 cup finely chopped cilantro leaves and tender stems
  • 1 lime cut into wedges

Combine olive oils, crema, cheese, chili powder, garlic, and cilantro in a large bowl. Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.

Garlic...enough said.
